Peaches, Peaches, Peaches!

After taking the Summer in a Jar class; all of my canning fears were now gone. I thought I was a canning expert! Boy oh, boy was I wrong…

Two days after the class I had a friend pick up a box of peaches from the Yakimaskinning peaches, removing peach skin, area; I took the afternoon off work to spend canning {without help}. Five hours later, I was physically exhausted but I had 22 pints of peaches ready for storage for the winter.

Basic steps in canning peaches
Wash
Boil 30 sec – 2 mins. (to loosen skin)skinned peaches, canning methods,
Remove from boiling water, place in ice water (to stop cooking)
Skin
Place in lemon water bath (to stop from browning)
Cut
Cook in syrup
Fill jars
Remove air bubbleschopped peaches, canning peaches,
Clean top
Seal (with sterilized lids)
Water bath
Store overnight
24 hours later, check seals and label jars
Open jars and eatcanning peaches,
